Description

Irresistibly crispy egg rolls filled with seasoned chicken or shrimp, oozy cheese, and a hint of Cajun spice.


Ingredients

  • Egg Roll Wrappers
  • 1 cup Cooked Chicken or Shrimp
  • 1 cup Cheddar or Pepper Jack Cheese, shredded
  • 1 tbsp Cajun Seasoning
  • Oil for Frying

Instructions

  1. In a large mixing bowl, combine cooked chicken or shrimp with shredded cheese and Cajun seasoning. Mix well until evenly coated.
  2. Lay an egg roll wrapper flat on a clean surface with one corner pointing towards you.
  3. Place a spoonful of your filling mixture in the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner, sealing it securely with a little water.
  5. Heat oil in a deep fryer or heavy skillet to 350°F (175°C).
  6. Fry the egg rolls in batches, ensuring not to overcrowd the pan. Cook until golden brown, about 3-4 minutes per side.
  7. Using a slotted spoon, transfer the fried egg rolls to a platter lined with paper towels to drain excess oil.
  8. Serve the egg rolls hot with your choice of dipping sauces.

Notes

Make the filling a day in advance and assemble just before frying for best crunch.
