- 1 cup Cooked Chicken or Shrimp
- 1 cup Cheddar or Pepper Jack Cheese, shredded
- 1 tbsp Cajun Seasoning
- Oil for Frying
Instructions
- In a large mixing bowl, combine cooked chicken or shrimp with shredded cheese and Cajun seasoning. Mix well until evenly coated.
- Lay an egg roll wrapper flat on a clean surface with one corner pointing towards you.
- Place a spoonful of your filling mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner, sealing it securely with a little water.
- Heat oil in a deep fryer or heavy skillet to 350°F (175°C).
- Fry the egg rolls in batches, ensuring not to overcrowd the pan. Cook until golden brown, about 3-4 minutes per side.
- Using a slotted spoon, transfer the fried egg rolls to a platter lined with paper towels to drain excess oil.
- Serve the egg rolls hot with your choice of dipping sauces.
Notes
Make the filling a day in advance and assemble just before frying for best crunch.
