- 4 Bell Peppers
- 1 lb Ground Beef or Turkey
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 can (14.5 oz) Diced Tomatoes
- 1 cup Rice (Optional)
- 2 tsp Italian Seasoning
- Salt & Pepper, to taste
- 1 cup Cheese (Optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half and remove the seeds.
- Sauté the onion and garlic in a skillet over medium heat until soft and fragrant, about 3-5 minutes.
- Add the ground beef or turkey and cook, breaking it up until browned, about 7-10 minutes.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
- If using rice, mix it in now.
- Fill each pepper half with the mixture.
- Arrange filled peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes.
- Uncover and add cheese, if desired. Bake for an additional 5-10 minutes until cheese is bubbly and golden.
- Serve and enjoy!
Notes
You can customize the filling by using vegetables or switching meats. Great for meal prep and can be made ahead of time.
