Description

A comforting dish featuring roasted bell peppers filled with a hearty meat and tomato mixture, embodying Italian cuisine’s warmth.


Ingredients

  • 4 Bell Peppers
  • 1 lb Ground Beef or Turkey
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 cup Rice (Optional)
  • 2 tsp Italian Seasoning
  • Salt & Pepper, to taste
  • 1 cup Cheese (Optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half and remove the seeds.
  3. Sauté the onion and garlic in a skillet over medium heat until soft and fragrant, about 3-5 minutes.
  4. Add the ground beef or turkey and cook, breaking it up until browned, about 7-10 minutes.
  5. Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
  6. If using rice, mix it in now.
  7. Fill each pepper half with the mixture.
  8. Arrange filled peppers in a baking dish and cover with foil.
  9. Bake for 25-30 minutes.
  10. Uncover and add cheese, if desired. Bake for an additional 5-10 minutes until cheese is bubbly and golden.
  11. Serve and enjoy!

Notes

You can customize the filling by using vegetables or switching meats. Great for meal prep and can be made ahead of time.
