Description

Ingredients

  • 2 lbs Pork Shoulder
  • 12 Corn or Flour Tortillas
  • 1 cup Onions, chopped
  • 1 cup Cilantro, chopped
  • 1/4 cup Lime Juice
  • 1 cup Salsa
  • 1 cup Pineapple, diced
  • 2 tbsp Achiote Paste
  • 4 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Oregano
  • Salt and Pepper, to taste

Instructions

  1. Marinate the Pork: In a mixing bowl, combine achiote paste, minced garlic, cumin, oregano, salt, and pepper. Coat the pork shoulder thoroughly with the marinade.
  2. Cover and refrigerate for at least two hours or overnight for deeper flavor.
  3. Preheat your grill or oven to medium-high heat. Cook the marinated pork until fully cooked (20-25 minutes on the grill or 45-60 minutes in the oven).
  4. Slice the Pork Thinly: After cooking, let the pork rest and then slice thinly.
  5. Warm the Tortillas: On the grill or in a skillet until pliable.
  6. Assemble Your Tacos: Place sliced pork in each tortilla, add onions, cilantro, lime juice, and salsa.
  7. Serve Immediately: Enjoy with loved ones, allowing customization of ingredients.

Notes
