- 8 oz spaghetti
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 bell pepper, chopped
- 1 cup corn
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the spaghetti according to the package instructions until al dente, about 8-10 minutes.
- Drain the spaghetti and set aside.
- Brown the ground beef in a skillet over medium heat, about 5-7 minutes.
- Add bell pepper and corn, stirring for about 5 minutes.
- Combine spaghetti, beef mixture, black beans, sour cream, and half the cheese in a large mixing bowl.
- Transfer the mixture to a greased 9×13-inch baking dish and sprinkle with remaining cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Serve warm and enjoy!
Notes
For make-ahead, prep the casserole a day in advance and cover tightly before refrigerating. For freezing, store in airtight containers for up to 2-3 months.
