Description

A comforting and exciting fusion of taco flavors and spaghetti baked to perfection, perfect for family gatherings or cozy weeknight meals.


Ingredients

  • 8 oz spaghetti
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, chopped
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the spaghetti according to the package instructions until al dente, about 8-10 minutes.
  3. Drain the spaghetti and set aside.
  4. Brown the ground beef in a skillet over medium heat, about 5-7 minutes.
  5. Add bell pepper and corn, stirring for about 5 minutes.
  6. Combine spaghetti, beef mixture, black beans, sour cream, and half the cheese in a large mixing bowl.
  7. Transfer the mixture to a greased 9×13-inch baking dish and sprinkle with remaining cheese.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
  9. Serve warm and enjoy!

Notes

For make-ahead, prep the casserole a day in advance and cover tightly before refrigerating. For freezing, store in airtight containers for up to 2-3 months.
