- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the chopped spinach, minced garlic, cream cheese, and mozzarella cheese in a mixing bowl. Season with salt and pepper.
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the creamy spinach mixture.
- Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until thoroughly cooked, reaching an internal temperature of 165°F (75°C).
- Allow the chicken to rest for a few minutes before slicing and serve hot.
Notes
