Delicious Strawberry Oatmeal Bars that combine chewy oats and sweet strawberries, perfect for any occasion.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Combine rolled oats, flour, both sugars, and salt in a large mixing bowl.
- Pour in melted butter and vanilla extract, mixing until the mixture resembles coarse sand.
- Press half of the oat mixture into the bottom of the baking dish.
- Toss chopped strawberries with strawberry jam and lemon juice in another bowl.
- Spread the strawberry mixture evenly over the pressed oat base.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 25-30 minutes until golden brown on top.
- Cool the bars in the pan for at least 10 minutes before slicing.
Notes
These bars are best served warm with ice cream or yogurt.
