- 1 meaty ham bone
- 2 carrots, diced
- 1 onion, diced
- 2 potatoes, diced
- 8 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Rinse the split peas in a fine-mesh strainer under cool water.
- Combine rinsed split peas, ham bone, diced carrots, onion, diced potatoes, and broth in a large pot.
- Bring the pot to a rolling boil over medium-high heat.
- Lower the heat and simmer for 1 to 1.5 hours until peas soften.
- Shred the ham from the bone, return it to the pot, and discard any fat.
- Season with salt and pepper to taste before serving.
- Serve hot in bowls, garnished with fresh herbs if desired.
