Description

A comforting split pea soup simmered with ham, carrots, potatoes, and aromatic onions, perfect for cozy dinners.


Ingredients

  • 2 cups green split peas
  • 1 meaty ham bone
  • 2 carrots, diced
  • 1 onion, diced
  • 2 potatoes, diced
  • 8 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas in a fine-mesh strainer under cool water.
  2. Combine rinsed split peas, ham bone, diced carrots, onion, diced potatoes, and broth in a large pot.
  3. Bring the pot to a rolling boil over medium-high heat.
  4. Lower the heat and simmer for 1 to 1.5 hours until peas soften.
  5. Shred the ham from the bone, return it to the pot, and discard any fat.
  6. Season with salt and pepper to taste before serving.
  7. Serve hot in bowls, garnished with fresh herbs if desired.

Notes

This soup can be made ahead of time and reheats beautifully. Customizations include adding herbs or using a vegetarian broth.
