- 2 cups cooked rice
- 1 pound shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 teaspoons sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Prepare your skillet: Heat the sesame oil in a large skillet over medium-high heat until shimmering.
- Cook the shrimp: Add the shrimp to the skillet and cook for 3-4 minutes until they turn rosy pink. Remove the shrimp from the skillet and set them aside.
- Sauté the vegetables: In the same skillet, add the mixed vegetables and sauté for 2-3 minutes until they soften.
- Scramble the eggs: Push the vegetables to one side and pour in the beaten eggs, scrambling until fluffy and fully cooked.
- Combine ingredients: Return the cooked shrimp, add the cold rice along with soy sauce and oyster sauce, stirring to combine everything.
- Season and serve: Season with salt and pepper, and top with chopped green onions before serving.
Notes
Use day-old, chilled rice for the best texture. Feel free to switch up the vegetables based on your preference.
