Description

A vibrant and festive meal where tender chicken and roasted vegetables come together in warm tortillas, perfect for gatherings and easy weeknight dinners.


Ingredients

  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced (yellow or red)
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting.
  2. Mix ingredients: In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, fajita seasoning, salt, and pepper. Toss everything together until well-coated.
  3. Spread on the sheet pan: Pour the mixture onto a large sheet pan, arranging it in a single layer.
  4. Bake to perfection: Place the sheet pan in the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the vegetables are tender.

Notes

Can slice the chicken and vegetables a day in advance. Consider using an air fryer for a different cooking method.
