Description

Healthy protein balls reminiscent of Samoa cookies, filled with oats, coconut, and dark chocolate.


Ingredients

Scale
  • 1 cup oats
  • 1/2 cup shredded coconut
  • 1/2 cup chocolate protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Combine oats, shredded coconut, chocolate protein powder, and a pinch of salt in a large mixing bowl.
  2. Whisk together the honey (or maple syrup), almond (or peanut) butter, and vanilla extract in another bowl until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until combined.
  4. Fold in the dark chocolate chips.
  5. Roll the mixture into small balls, about 1 inch in diameter.
  6. Place them on a baking sheet lined with parchment paper.
  7. Refrigerate for at least 30 minutes to set.

Notes

For added flavor, you can substitute almond butter with cashew butter or use agave syrup instead of honey.
