Description
Healthy protein balls reminiscent of Samoa cookies, filled with oats, coconut, and dark chocolate.
Ingredients

- 1 cup oats
- 1/2 cup shredded coconut
- 1/2 cup chocolate protein powder
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1/4 cup dark chocolate chips
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Combine oats, shredded coconut, chocolate protein powder, and a pinch of salt in a large mixing bowl.
- Whisk together the honey (or maple syrup), almond (or peanut) butter, and vanilla extract in another bowl until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fold in the dark chocolate chips.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place them on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to set.
Notes
For added flavor, you can substitute almond butter with cashew butter or use agave syrup instead of honey.
