- 8 Pineapple Rings
- 1 Cup Dark Rum
- 1 Cup Coconut Rum
- 1 ½ Cups All-Purpose Flour
- 10 oz Sweetened Coconut Flakes
- 2 Large Eggs
- ½ Cup Coconut Milk
- Vegetable Oil for Frying
- 4 oz Cream Cheese, Softened
- ½ Cup Powdered Sugar
Instructions
- Soak the pineapple rings in dark rum and coconut rum for at least one hour, then drain and pat dry.
- Set up three shallow bowls: one with flour, one with whisked eggs mixed with coconut milk, and one with sweetened coconut flakes.
- Coat each pineapple ring in flour, dip it in the egg mixture, and then press it into the coconut flakes.
- Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
- Fry the coated rings in batches for about one minute per side until golden brown.
- Prepare the dipping sauce by mixing cream cheese with powdered sugar and a splash of rum until smooth.
- Serve warm with the creamy dip on the side.
Notes
For the best results, use fresh pineapple and soak it longer for more flavor. Serve with vanilla ice cream or whipped cream for added indulgence.
