Ingredients

- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 pound sausage (chicken, pork, or beef)
- 2 cups chicken broth
- 1 diced bell pepper
- 1 diced onion
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a splash of olive oil in a large skillet over medium heat.
- Sauté diced onion and bell pepper for 3-4 minutes until softened.
- Add sausage and cook until browned, breaking it up as it cooks.
- Stir in rice and black beans.
- Pour in chicken broth, cumin, chili powder, salt, and pepper; stir to combine.
- Bring to a boil, then cover and simmer for 15 minutes.
- Fluff the rice with a fork and serve hot.
Notes
Customize with additional vegetables or cheese. Can be made ahead by pre-cooking the sausage and veggies and storing in the fridge.
