Description

A vibrant one-pan dish featuring sausage, rice, black beans, and colorful vegetables, infused with spices for a delightful south-of-the-border experience.


Ingredients

Scale
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 pound sausage (chicken, pork, or beef)
  • 2 cups chicken broth
  • 1 diced bell pepper
  • 1 diced onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a splash of olive oil in a large skillet over medium heat.
  2. Sauté diced onion and bell pepper for 3-4 minutes until softened.
  3. Add sausage and cook until browned, breaking it up as it cooks.
  4. Stir in rice and black beans.
  5. Pour in chicken broth, cumin, chili powder, salt, and pepper; stir to combine.
  6. Bring to a boil, then cover and simmer for 15 minutes.
  7. Fluff the rice with a fork and serve hot.

Notes

Customize with additional vegetables or cheese. Can be made ahead by pre-cooking the sausage and veggies and storing in the fridge.
