Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, cocoa powder, baking powder, cinnamon, cayenne pepper, and salt in a mixing bowl.
- Blend the softened butter with granulated and brown sugars using an electric mixer for 3-5 minutes.
- Add the vanilla extract and egg to the butter mixture, mixing thoroughly.
- Combine the dry ingredients into the wet mixture, stirring gently until a cohesive dough forms.
- Roll the dough into balls—about one tablespoon each—and place them on a parchment-lined baking sheet.
- Bake for 10-12 minutes, until the edges are set but the centers still look slightly soft.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
Notes
Chill the dough in the refrigerator for a day for enhanced flavor. Avoid overmixing to prevent tough cookies.
