Ingredients

Scale
  • 4 cups shredded cabbage
  • 1 cup corn (fresh, frozen, or canned)

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder

Instructions

  1. Combine the Vegetables: In a large mixing bowl, add the shredded cabbage, corn, diced red onion, bell peppers, and fresh cilantro. Toss everything together to mix.
  2. Whisk the Dressing: In a smaller bowl, whisk together the mayonnaise, lime juice, chili powder, and salt and pepper until smooth.
  3. Dress the Slaw: Pour the dressing over the cabbage mixture and toss until well coated.
  4. Chill: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 15 minutes.
