Description

A vibrant and refreshing slaw that combines sweet corn, crunchy red cabbage, and zesty lime, perfect for summer gatherings.


Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 cup red cabbage, shredded
  • 1 cup green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine the corn, red cabbage, green onions, and cilantro in a large bowl.
  2. Whisk together the mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl.
  3. Pour the dressing over the corn mixture and gently toss to coat.
  4. Chill in the refrigerator for at least 15 minutes before serving.
  5. Serve at BBQs, picnics, or potlucks.
