  • 8 oz Pasta (Penne or Fettuccine)
  • 1 Cup Sun-dried Tomatoes, Chopped
  • 2 Cups Fresh Spinach
  • 1 Cup Heavy Cream
  • 1 Cup Chicken Broth
  • 1/2 Cup Grated Parmesan Cheese
  • 2 Cloves Garlic, Minced
  • 1 tsp Dried Basil
  • Salt and Pepper to Taste
  • Olive Oil

Instructions

  1. Cook the pasta: Begin by bringing a pot of salted water to a rolling boil. Cook your pasta according to the package instructions until al dente. Drain the pasta and set it aside, reserving a splash of the pasta water if necessary.
  2. Sear the chicken: In a large skillet, drizzle olive oil over medium heat. Season your chicken breasts generously with salt and pepper. Cook for about 6–7 minutes on each side until golden brown and cooked through. Transfer the chicken to a plate and let it rest.
  3. Sauté the garlic: In the same skillet, add more olive oil if necessary, and sauté minced garlic until fragrant, about 30 seconds.
  4. Add tomatoes and spinach: Toss in the sun-dried tomatoes and fresh spinach to the skillet. Stir until the spinach wilts.
  5. Mix in the liquids: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Thicken the sauce: Sprinkle in grated Parmesan cheese and dried basil while stirring until the cheese melts and the sauce thickens.
  7. Slice and combine: Slice the cooked chicken into strips and return it to the skillet, tossing to coat in the sauce.
  8. Add the pasta: Gently fold in the cooked pasta, ensuring every piece is well coated with the creamy sauce.
