- Salt and pepper to taste

Instructions
- Heat a generous drizzle of olive oil in a large pot over medium heat.
- Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
- Place the chicken in the pot, allowing it to sear until golden brown, about 6-7 minutes on each side.
- Remove the chicken and set it aside on a plate.
- Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes.
- Stir in the orzo and toast it for about a minute.
- Pour in the chicken broth and heavy cream, stirring to combine.
- Bring the mixture to a gentle simmer.
- Add the sun-dried tomatoes and spinach, and return the chicken to the pot.
- Cover the pot and let it simmer for about 10-12 minutes.
- Taste and adjust seasoning as necessary before serving.
