- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
- 2 ripe mangoes, peeled and diced
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease the 9×9 inch baking dish.
- Combine oats, flour, brown sugar, melted butter, honey or maple syrup, cinnamon, and salt in a large bowl. Mix until crumbly.
- Press half of this mixture into the bottom of your greased baking dish to form the crust.
- Toss diced mangoes with lemon juice in another bowl. Spread the mango mixture over the crust.
- Sprinkle the remaining oat mixture over the mango layer evenly.
- Bake for 25–30 minutes until golden brown and edges bubble slightly.
- Cool completely in the baking dish before slicing into bars.
Notes
These bars can be made a day in advance; store in an airtight container.
