- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup mango puree
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/2 cup raspberry puree
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Prepare the crust: In a mixing bowl, combine the all-purpose flour, powdered sugar, and softened butter. Mix until the mixture resembles coarse crumbs.
- Press this mixture evenly into the bottom of the prepared pan. Bake for 15-20 minutes or until light golden brown.
- Make the curd: In a separate bowl, whisk together mango puree, granulated sugar, eggs, lemon juice, lemon zest, and salt until completely smooth.
- Assemble: Once the crust is baked and slightly cooled, pour the mango curd mixture over the crust. Drop raspberry puree across the surface and gently swirl it.
- Bake again: Place back in the oven and bake for an additional 20-25 minutes until the curd has set.
- Cool down: Allow the bars to cool completely in the pan on a wire rack.
- Slice and serve once cool.

Make-ahead tips: Prepare your curd bars a day in advance to enhance the flavors. Use an air fryer for quicker cooking at 305°F for about 15-20 minutes.
