Description

A vibrant and refreshing salad combining tender chicken, pasta, and juicy mandarin oranges, tossed in a savory soy and sesame dressing.

Ingredients

Scale
  • 2 cups cooked pasta (farfalle or rotini)
  • 1 cup cooked chicken, shredded
  • 1 cup canned mandarin oranges, drained
  • 1 cup mixed vegetables (bell peppers, carrots, snap peas)
  • ½ cup green onions, sliced
  • ¼ cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste

Instructions

  1. Combine the cooked pasta, shredded chicken, mandarin oranges, mixed vegetables, and sliced green onions in a large mixing bowl.
  2. Whisk together soy sauce, sesame oil, rice vinegar, salt, and pepper in a separate bowl until smooth.
  3. Pour the dressing over the pasta mixture, tossing everything together until well coated.
  4. Serve immediately or refrigerate for up to three days, tossing again before serving.

Notes

For maximum flavor, prepare the salad in advance and let it sit to meld the flavors. Use rotisserie chicken for a quicker prep.
