- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Chopped cilantro for garnish
Instructions
- In a mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, egg, chopped green onions, and a pinch of salt and pepper. Mix until all ingredients come together in a cohesive blend.
- Shape the mixture into one-inch meatballs.
- Heat vegetable oil in a large skillet over medium heat. Brown the meatballs on all sides, about 7-10 minutes.
- In a separate pot, whisk together coconut milk, curry powder, soy sauce, and brown sugar until smooth. Bring to a gentle simmer.
- Carefully add the browned meatballs to the simmering sauce. Allow them to cook for about 15-20 minutes.
- Serve warm, garnished with freshly chopped cilantro. Enjoy!
