Description

Tender meatballs infused with jerk seasoning and simmered in a rich coconut curry sauce, perfect for a comforting meal.


Ingredients

  • 1 pound ground beef or turkey
  • 2 tablespoons jerk seasoning
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Chopped cilantro for garnish

Instructions

  1. In a mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, egg, chopped green onions, and a pinch of salt and pepper. Mix until all ingredients come together in a cohesive blend.
  2. Shape the mixture into one-inch meatballs.
  3. Heat vegetable oil in a large skillet over medium heat. Brown the meatballs on all sides, about 7-10 minutes.
  4. In a separate pot, whisk together coconut milk, curry powder, soy sauce, and brown sugar until smooth. Bring to a gentle simmer.
  5. Carefully add the browned meatballs to the simmering sauce. Allow them to cook for about 15-20 minutes.
  6. Serve warm, garnished with freshly chopped cilantro. Enjoy!
