Description

Delightful and fluffy Honey Cornbread Muffins, perfect for any occasion, combining the sweetness of honey with the earthy flavors of cornmeal.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/3 cup honey
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Grease your muffin tin generously.
  2. Mix Dry Ingredients: In a large bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk until mixed.
  3. Combine Wet Ingredients: In another bowl, whisk together milk, eggs, honey, and melted butter.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill Muffin Cups: Spoon the batter into each muffin cup, filling them about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Drizzle: Allow muffins to cool slightly before transferring them to a wire rack. Drizzle with honey before serving.
