Description

A comforting and hearty casserole featuring ground beef, rice, and a creamy mushroom sauce topped with melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 cup rice
  • 1 can cream of mushroom soup
  • 1 cup cheese (e.g., cheddar)
  • 1 onion, chopped
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional: green beans or mixed vegetables

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef until browned, about 5–7 minutes.
  3. Add the chopped onion and cook until softened, about 5 minutes.
  4. Drain excess fat from the skillet.
  5. Combine the cooked beef and onion with rice, cream of mushroom soup, beef broth, cheese, and optional vegetables in a large mixing bowl.
  6. Season generously with salt and pepper.
  7. Pour the mixture into a greased casserole dish.
  8. Loosely cover with foil and bake for 30-35 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  10. Let it cool for a few minutes before serving.

Notes

You can make this casserole a day in advance and bake it just before serving. It’s also great for meal prep.
