- 1 pound ground beef
- 1 cup rice
- 1 can cream of mushroom soup
- 1 cup cheese (e.g., cheddar)
- 1 onion, chopped
- 2 cups beef broth
- Salt and pepper to taste
- Optional: green beans or mixed vegetables
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the ground beef until browned, about 5–7 minutes.
- Add the chopped onion and cook until softened, about 5 minutes.
- Drain excess fat from the skillet.
- Combine the cooked beef and onion with rice, cream of mushroom soup, beef broth, cheese, and optional vegetables in a large mixing bowl.
- Season generously with salt and pepper.
- Pour the mixture into a greased casserole dish.
- Loosely cover with foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
You can make this casserole a day in advance and bake it just before serving. It’s also great for meal prep.
