- 14 oz firm tofu, pressed and cubed
- 3 tablespoons za’atar spice mix
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Vegetables for skewering (bell peppers, onion, cherry tomatoes)
- Fresh herbs (optional, for garnish)
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together za’atar spice mix, olive oil, lemon juice, salt, and pepper until smooth.
- Marinate the Tofu: Add the cubed tofu to the marinade and gently fold to coat. Let it sit for at least 30 minutes.
- Skewer Up: Thread the marinated tofu and vegetables onto skewers, alternating for a colorful presentation.
- Get Grilling: Preheat your grill to medium heat.
- Grill to Perfection: Grill the skewers for about 10-15 minutes, turning occasionally, until the tofu is golden brown and vegetables are tender.
- Serve Warm: Remove from grill and garnish with fresh herbs before serving.
Notes
Press tofu well for maximum flavor absorption and marinate longer for deeper flavors. Wooden skewers should be soaked before grilling.
