Description

A vibrant and refreshing salad featuring juicy strawberries and creamy feta, perfect for summer gatherings.


Ingredients

Scale
  • 2 cups fresh strawberries, halved
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar or lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash the strawberries under cool water, remove the green stems, and slice them.
  2. Add the mixed greens to a large mixing bowl.
  3. Fold the sliced strawberries into the greens gently.
  4. Sprinkle the crumbled feta cheese over the top of the salad.
  5. Combine olive oil, balsamic vinegar (or lemon juice), salt, and pepper in a separate bowl and whisk until smooth.
  6. Drizzle the dressing over the salad and toss gently.
  7. Serve immediately in a large bowl.

Notes

For make-ahead tips, prepare strawberries and greens in advance, and add feta and dressing just before serving.
