Description

Decadent flourless chocolate muffins infused with creamy peanut butter, perfect for a guilt-free indulgence.


Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. Combine the peanut butter, honey (or maple syrup), eggs, and vanilla in a large mixing bowl. Whisk until smooth and creamy.
  3. Add in the cocoa powder, baking soda, and salt. Mix until just combined.
  4. Fold in the chocolate chips gently with a spatula.
  5. Pour the batter evenly into the prepared muffin tin filling each liner about three-quarters full.
  6. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
