Description

A vibrant and flavorful shrimp fried rice dish, perfect for busy weeknight dinners or gatherings, featuring tender shrimp, colorful vegetables, and seasoned rice.

Ingredients

Scale
  • 1 cup cooked rice
  • 200 grams shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Cook shrimp until pink and curling, about 2-3 minutes.
  3. Scramble eggs next to the shrimp, cooking undisturbed for a moment.
  4. Add mixed vegetables, stirring for 2-3 minutes until heated.
  5. Combine the cold rice and soy sauce, folding gently.
  6. Season with salt and pepper, then add green onions and mix well.
  7. Serve hot, garnishing with extra green onions if desired.

Notes

Use cold, leftover rice for the best texture. Feel free to customize with additional ingredients like bell peppers or tofu.
