- 1 cup dulce de leche
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar in a large bowl using an electric mixer until smooth and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Whisk together the flour, baking powder, ground cinnamon, and salt in a medium bowl.
- Fold the dry ingredients into the creamed mixture until just combined.
- Portion out round balls of cookie dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Spread dulce de leche on the bottom of one cookie and sandwich with another.
