- 8 oz lo mein noodles
- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the noodles: Bring a pot of water to a rolling boil and cook the lo mein noodles according to package instructions. Drain them and set aside.
- Prepare the stir-fry: In a large skillet or wok, heat the sesame oil over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Brown the chicken: Toss in the sliced chicken breast. Cook for 5-7 minutes, stirring frequently until the chicken is golden-brown and cooked through.
- Incorporate vegetables: Add your mixed vegetables to the pan. Sauté for about 3-4 minutes until vibrant and slightly tender.
- Combine everything: Toss in the drained noodles along with soy sauce, oyster sauce, salt, and pepper. Mix thoroughly and heat for an additional 2-3 minutes.
- Garnish and serve: Remove from heat, sprinkle chopped green onions on top, and serve immediately.
