- 1 lb beef (cubed or sliced)
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 cloves garlic (minced)
- 1 onion (chopped)
- Salt and pepper to taste
- Green onions (for garnish)
Instructions
- Heat the sesame oil in a large skillet over medium-high heat until fragrant.
- Sauté the chopped onion until soft and translucent.
- Add the minced garlic and beef, cooking until the beef is browned.
- Scramble the eggs in the cleared area of the skillet until just set.
- Combine the cold, cooked rice and mixed vegetables, mixing gently.
- Season with soy sauce, adding salt and pepper to taste.
- Allow the mixture to simmer a few minutes for flavors to meld.
- Garnish with chopped green onions and serve warm.
