- 2 tbsp Olive Oil
- 1 tsp Rosemary
- 1 tsp Thyme
- 2 tbsp Fresh Parsley, chopped
- Salt, to taste

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the rainbow carrots, then cut them into uniform pieces, ideally about 1-2 inches long.
- Toss the chopped carrots with olive oil, rosemary, thyme, parsley, salt, and pepper in a large mixing bowl.
- Spread the carrots on a rimmed baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through.
- Remove from the oven and serve warm, drizzled with extra olive oil and sprinkled with flaky sea salt.
