Description

A vibrant medley of rainbow carrots roasted to perfection, offering a sweet, earthy flavor with a delightful caramelization.


Ingredients

  • 1 lb Rainbow Carrots
  • 2 tbsp Olive Oil
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 2 tbsp Fresh Parsley, chopped
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the rainbow carrots, then cut them into uniform pieces, ideally about 1-2 inches long.
  3. Toss the chopped carrots with olive oil, rosemary, thyme, parsley, salt, and pepper in a large mixing bowl.
  4. Spread the carrots on a rimmed baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  6. Remove from the oven and serve warm, drizzled with extra olive oil and sprinkled with flaky sea salt.

Notes

Make-ahead tips: Prep the carrots and toss them with oil and seasonings a few hours in advance, then refrigerate. For a quicker option, try roasting in an air fryer.
