Description

Delightful churro muffins that capture the essence of sweet indulgence with a gooey dulce de leche center and a crunchy cinnamon-sugar coating.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup dulce de leche or caramel sauce
  • 1/4 cup sugar (for coating)
  • 2 tsp cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Mix the melted butter and 1/2 cup of sugar until creamy in another bowl.
  4. Add the egg and vanilla extract to the butter mixture and whisk until fully combined.
  5. Gradually add the flour mixture and milk, mixing gently until just combined.
  6. Fill each muffin cup halfway, add a dollop of dulce de leche, and cover with more batter.
  7. Bake for 15-18 minutes, or until a toothpick comes out clean.
  8. Combine the remaining sugar and cinnamon; roll warm muffins in this mixture to coat.

Notes

Avoid overmixing the batter and skipping the sugar coating for the best results.
