Description

A comforting pasta dish with smoky chorizo and tender chicken in a creamy sauce, perfect for cozy evenings or gatherings.


Ingredients

  • 8 oz pasta (penne, fusilli, or spaghetti)
  • 1 tablespoon olive oil
  • 1 cup chorizo, sliced
  • 1 cup chicken breast, diced
  • 2 cups diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add sliced chorizo and diced chicken; sauté for about 5-7 minutes until golden brown.
  3. Stir in the diced tomatoes, heavy cream, chili powder, garlic powder, salt, and pepper. Let simmer for about 5 minutes.
  4. Toss in the cooked pasta, stirring to coat every noodle with the sauce.
  5. Cook for another 8-10 minutes, checking for al dente doneness.
  6. If the sauce thickens, add reserved pasta water to achieve desired consistency.
  7. Serve hot, garnished with cilantro.

Notes

Make ahead by preparing the chorizo and chicken mixture in advance. Consider adding veggies or using a different type of sausage as desired.
