- 4 chicken thighs
- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup smoked gouda cheese, shredded
- Butter, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chipotle honey, smoked paprika, garlic powder, salt, and pepper in a mixing bowl to create a marinade.
- Coat each chicken thigh generously with the marinade and place them in a baking dish.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Boil a pot of salted water and add the cubed potatoes; cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Mash the potatoes with milk and butter, then stir in the smoked gouda until melted.
- Serve the chicken thighs alongside the gouda mashed potatoes, drizzling with any leftover chipotle honey sauce.
Notes
Marinate chicken a day ahead for deeper flavors. Air frying can also be an option for a crisp exterior.
