Description

Succulent chicken thighs coated in a smoky chipotle honey glaze, served alongside creamy smoked gouda mashed potatoes.


Ingredients

Scale
  • 4 chicken thighs
  • 2 tablespoons chipotle honey sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup smoked gouda cheese, shredded
  • Butter, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chipotle honey, smoked paprika, garlic powder, salt, and pepper in a mixing bowl to create a marinade.
  3. Coat each chicken thigh generously with the marinade and place them in a baking dish.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  5. Boil a pot of salted water and add the cubed potatoes; cook until tender, about 15 minutes.
  6. Drain the potatoes and return them to the pot.
  7. Mash the potatoes with milk and butter, then stir in the smoked gouda until melted.
  8. Serve the chicken thighs alongside the gouda mashed potatoes, drizzling with any leftover chipotle honey sauce.

Notes

Marinate chicken a day ahead for deeper flavors. Air frying can also be an option for a crisp exterior.
