- 2 chicken breasts, boneless
- 1/4 cup flour
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup capers
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Cook the Pasta: Begin by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente, then drain and set aside. Toss with a bit of olive oil to prevent sticking.
- Prepare the Chicken: Season each chicken breast generously with salt and pepper. Dredge both sides in flour to create a light coating.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through (approximately 5-7 minutes on each side). Remove and let rest.
- Create the Sauce: In the same skillet, add minced garlic and sauté for about a minute. Pour in the chicken broth and lemon juice, scraping up brown bits from the pan.
- Incorporate Capers: Stir in the capers, allowing them to mingle with the sauce.
- Combine with Pasta: Return the cooked pasta to the skillet, tossing gently in the sauce.
- Slice & Serve: Cut the chicken into slices and arrange atop the pasta. Garnish with parsley and serve warm.
Notes
For a unique twist, try cooking the chicken in an air fryer. You can prepare the sauce in advance and store it in the fridge.
