Description

A comforting and creamy casserole filled with tender chicken, fresh spinach, and a blend of cheeses, topped with a crunchy breadcrumb layer.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 2 cups mixed cheeses (mozzarella and cheddar)
  • 1 cup heavy cream or cream of chicken soup
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, fresh spinach, mixed cheeses, heavy cream (or cream of chicken soup), minced garlic, Italian seasoning, salt, and pepper in a large mixing bowl.
  3. Prepare a 9×13 inch baking dish by greasing it with cooking spray or butter.
  4. Pour the mixture into the baking dish, spreading it evenly.
  5. Sprinkle breadcrumbs over the top if desired.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let the casserole cool slightly before serving.

Notes

For make-ahead, prepare the casserole the night before and refrigerate. Add extra baking time when baking straight from fridge.
