- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 2 cups mixed cheeses (mozzarella and cheddar)
- 1 cup heavy cream or cream of chicken soup
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the shredded chicken, fresh spinach, mixed cheeses, heavy cream (or cream of chicken soup), minced garlic, Italian seasoning, salt, and pepper in a large mixing bowl.
- Prepare a 9×13 inch baking dish by greasing it with cooking spray or butter.
- Pour the mixture into the baking dish, spreading it evenly.
- Sprinkle breadcrumbs over the top if desired.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let the casserole cool slightly before serving.
Notes
For make-ahead, prepare the casserole the night before and refrigerate. Add extra baking time when baking straight from fridge.
