Description

A delightful dish of roasted potatoes topped with melted cheese and crispy bacon, perfect for breakfast or brunch.


Ingredients

  • 4 medium potatoes, diced (russet or Yukon gold)
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, and pepper in a mixing bowl.
  3. Spread the potatoes onto a baking sheet in a single layer.
  4. Bake for 25-30 minutes, stirring halfway through.
  5. Remove from the oven and sprinkle cheese on top, then return to bake for an additional 5 minutes.
  6. Top with bacon and green onions before serving warm.

Notes
