Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper in a mixing bowl.
- Spread the potatoes onto a baking sheet in a single layer.
- Bake for 25-30 minutes, stirring halfway through.
- Remove from the oven and sprinkle cheese on top, then return to bake for an additional 5 minutes.
- Top with bacon and green onions before serving warm.
