Instructions
- Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until combined. Set it aside.
- Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3–4 minutes.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until well incorporated.
- Incorporate the Dry Ingredients: Gradually stir in the flour mixture until smooth.
- Divide the Dough: Divide the dough in half. Fold in cocoa powder into one half.
- Shape and Chill the Dough: Roll each half into logs, wrap tightly with plastic wrap, and chill for at least 30 minutes.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Slice and Arrange: Slice the chilled logs into 1/4-inch rounds and arrange on a lined baking sheet.
- Bake: Bake for 10-12 minutes, or until cookies are just set.
- Cool and Enjoy: Allow to cool on the baking sheet before transferring to a wire rack.
