Description

Delightful carrot cake cookies that combine classic flavors and wholesome ingredients in a chewy, comforting treat.


Ingredients

  • 1/2 teaspoon baking soda

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup rolled oats
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars in another bowl until light and fluffy, about 3-4 minutes.
  4. Add egg and vanilla extract to the butter mixture and mix until combined.
  5. Combine the wet and dry ingredients, stirring gently until just mixed.
  6. Fold in grated carrots, rolled oats, and butterscotch chips.
  7. Drop heaping tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
