Description

A comforting breakfast bowl featuring sautéed spinach, rich eggs, and creamy feta, perfect for a nourishing start to your day.


Ingredients

  • 2 eggs
  • 1 cup fresh spinach
  • 1/4 cup feta cheese
  • 1/2 cup cooked quinoa or brown rice (optional)
  • Olive oil, for cooking
  • Salt and pepper to taste

Instructions

  1. Heat a bit of olive oil in a non-stick skillet over medium heat.
  2. Toss in your fresh spinach and sauté until wilted, about 2-3 minutes.
  3. Cook your eggs in a separate pan to your liking.
  4. Layer the cooked quinoa or brown rice at the bottom of a bowl, if using.
  5. Add the sautéed spinach followed by the cooked eggs.
  6. Crumble feta cheese over the top and season with salt and pepper.
  7. Serve warm and enjoy!

Notes

For make-ahead tips, prepare your quinoa or brown rice in advance and store in the fridge. You can also sauté extra spinach for quick meals.
