- 4 Salmon Fillets (skin-on)
- 1 cup Blackberries
- 1/2 cup Bourbon
- 2 tablespoons Honey or Brown Sugar
- 2 tablespoons Soy Sauce
- 2 cloves Minced Garlic
- Salt and Pepper (to taste)
- 2 tablespoons Olive Oil
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the bourbon, honey or brown sugar, soy sauce, and minced garlic in a small saucepan and simmer for 5-7 minutes until thickened.
- Place the salmon fillets in a baking dish, season with salt and pepper, and drizzle with olive oil.
- Top the salmon with blackberries and pour the bourbon glaze over the fillets.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Serve warm, garnished with additional blackberries and fresh herbs if desired.

Make-ahead tip: Prepare the glaze in advance and refrigerate. For quick cooking, use an air fryer and adjust the time to about 10-12 minutes.
