- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon butter
- 1 premade pie crust
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- Combine the blueberries, sugar, cornstarch, lemon juice, and cinnamon in a large bowl.
- Prepare the pie crust in the dish and pour the blueberry mixture into it.
- Create a lattice top by rolling out a second pie crust and cutting it into strips.
- Trim any excess dough and brush the lattice with the egg wash.
- Bake for 20-25 minutes, until the crust is golden and the filling is bubbly.
- Cool the pie for at least 30 minutes before serving.
Notes
Serve with vanilla ice cream or whipped cream for a delightful treat. To avoid a soggy bottom, consider blind baking the crust briefly before adding the filling.
