Description

Juicy and tender salmon meatballs seasoned to perfection, paired with a creamy avocado sauce.


Ingredients

Scale
  • 1 lb fresh salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado
  • 1 tablespoon lemon juice
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the salmon by pulsing it in a food processor until finely chopped.
  3. Mix the chopped salmon, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper in a medium bowl until well combined.
  4. Form the mixture into 1.5-inch meatballs and place them on the baking sheet.
  5. Bake for 15-20 minutes or until golden brown and cooked through.
  6. Prepare the avocado sauce by blending avocado, lemon juice, Greek yogurt, salt, and pepper until smooth.
  7. Serve the meatballs warm with the avocado sauce on the side for dipping.

Notes

Make the meatballs in advance and store in the refrigerator for up to 24 hours before baking. These meatballs can also be cooked in an air fryer.
