Description
A rich and creamy Baileys Cheesecake Cake that combines the luxurious flavors of cheesecake and Irish cream, topped with decadent chocolate shavings.

- 2 cups graham cracker crumbs
- 1/2 cup sugar (for the crust)
- 1/2 cup butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar (for filling)
- 1 cup Baileys Irish Cream
- 4 large eggs
- 1 cup flour
- 1 cup chocolate chips
- 1 cup heavy cream
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (160°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a mixing bowl, combine the graham cracker crumbs, 1/2 cup of sugar, and melted butter. Press this mixture into the bottom of the prepared pans.
- In another bowl, beat softened cream cheese until smooth. Gradually add in 1 cup of sugar, mixing until incorporated.
- Pour in the Baileys Irish Cream and mix until combined.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in the flour until no white streaks remain.
- Divide the batter evenly between the prepared pans. Bake for 50-60 minutes, or until centers are set but slightly jiggly.
- Once baked, allow the cakes to cool completely in the pans before removing.
- Whip the heavy cream until soft peaks form, then fold into the remaining cheesecake batter.
- Layer the cakes with the whipped cheesecake frosting in between and frost the top and sides of the cake.
- Garnish with chocolate shavings and serve chilled.
Notes
Make-ahead tip: Cheesecake layers can be prepared a day in advance. Refrigerate overnight for best flavor.
