Description

A rich and creamy Baileys Cheesecake Cake that combines the luxurious flavors of cheesecake and Irish cream, topped with decadent chocolate shavings.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar (for the crust)
  • 1/2 cup butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar (for filling)
  • 1 cup Baileys Irish Cream
  • 4 large eggs
  • 1 cup flour
  • 1 cup chocolate chips
  • 1 cup heavy cream
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 325°F (160°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/2 cup of sugar, and melted butter. Press this mixture into the bottom of the prepared pans.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add in 1 cup of sugar, mixing until incorporated.
  4. Pour in the Baileys Irish Cream and mix until combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gently fold in the flour until no white streaks remain.
  7. Divide the batter evenly between the prepared pans. Bake for 50-60 minutes, or until centers are set but slightly jiggly.
  8. Once baked, allow the cakes to cool completely in the pans before removing.
  9. Whip the heavy cream until soft peaks form, then fold into the remaining cheesecake batter.
  10. Layer the cakes with the whipped cheesecake frosting in between and frost the top and sides of the cake.
  11. Garnish with chocolate shavings and serve chilled.

Notes

Make-ahead tip: Cheesecake layers can be prepared a day in advance. Refrigerate overnight for best flavor.
