Description

A savory quiche with a creamy egg filling, smoky bacon, and a crunchy potato crust, perfect for brunch or any meal.


Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 2 cups smashed potatoes (for the crust)
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the smashed potatoes into a greased pie dish to form the crust.
  3. Whisk together the eggs and milk in a mixing bowl until frothy.
  4. Stir in the cheese and bacon, seasoning with salt and pepper.
  5. Pour the egg mixture into the potato crust.
  6. Bake for 30-35 minutes, until set and golden brown.
  7. Cool for a few minutes, then garnish with chives or parsley and serve warm.

Notes

Make ahead by preparing the potato crust the night before. Can be served warm or cold.
