Description

A delightful coffee cake featuring tender apples and a crunchy oat topping, perfect for autumn gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup brewed coffee, cooled
  • 2 large eggs
  • 3 cups apples, peeled and sliced
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans or walnuts (optional)
  • Whipped cream or ice cream for serving (optional)
  • Extra sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Cream the softened butter with 1 ½ cups granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then gently stir in the cooled coffee.
  4. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the sliced apples gently using a spatula.
  7. Combine brown sugar with rolled oats and chopped nuts for the streusel topping.
  8. Pour the batter into the prepared pan and sprinkle the streusel topping on top.
  9. Bake for 35-40 minutes, or until a toothpick comes out clean.
  10. Cool completely before cutting into squares. Serve warm with optional toppings.

Notes

Make-ahead tips: Prepare the batter a day in advance and store it in the fridge. Can substitute apples with pears or berries.
