- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1 cup brewed coffee, cooled
- 2 large eggs
- 3 cups apples, peeled and sliced
- 1/2 cup rolled oats
- 1/4 cup chopped pecans or walnuts (optional)
- Whipped cream or ice cream for serving (optional)

Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Cream the softened butter with 1 ½ cups granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then gently stir in the cooled coffee.
- Sift together the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the sliced apples gently using a spatula.
- Combine brown sugar with rolled oats and chopped nuts for the streusel topping.
- Pour the batter into the prepared pan and sprinkle the streusel topping on top.
- Bake for 35-40 minutes, or until a toothpick comes out clean.
- Cool completely before cutting into squares. Serve warm with optional toppings.

Make-ahead tips: Prepare the batter a day in advance and store it in the fridge. Can substitute apples with pears or berries.
