Description

Ingredients

  • 8 oz pasta (any type)
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add bell pepper, zucchini, and yellow squash; sauté for about 5-7 minutes until vegetables are tender.
  4. Stir in garlic and cook for an additional minute.
  5. Add the cherry tomatoes and spinach; cook until spinach is wilted.
  6. Toss in the cooked pasta and mix well.
  7. Season with salt and pepper.
  8. Serve warm, topped with grated Parmesan cheese if desired.

Notes
