Description

A delightful and comforting sandwich filled with earthy mushrooms, aromatic shallots, and gooey Swiss cheese, all ensconced in crispy, golden bread.


Ingredients

Scale
  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a dry skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until moisture evaporates.
  2. Add the butter, olive oil, and shallots to the mushrooms. Cook for another 5 minutes until golden.
  3. Stir in the thyme, balsamic vinegar, salt, and pepper to enhance the flavors and set aside to cool.
  4. Butter one side of each slice of bread.
  5. Layer on the unbuttered side, one slice of cheese, a spoonful of mushroom mixture, and another slice of cheese.
  6. Top with another slice of bread, buttered side facing up.
  7. Cook the sandwich in a preheated skillet for 2–3 minutes per side until golden brown and the cheese is melted.

Notes

Make ahead by preparing the mushroom filling up to three days in advance. Use different types of cheese or bread for customization.
