- 2 tablespoons olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- ¼ teaspoon crushed red pepper flakes
- 5 cups (4 pints) cherry tomatoes
- ½ cup water
- ¼ cup apple cider vinegar
- ¼ cup dark brown sugar
- 2 sprigs fresh thyme
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Heat the olive oil in a large soup pot or Dutch oven over medium heat.
- Sauté the diced onion for about 5 minutes until softened, then add the minced garlic and spices.
- Combine the halved cherry tomatoes with water, apple cider vinegar, dark brown sugar, thyme, salt, and black pepper. Bring to a vigorous boil.
- Simmer for 25–30 minutes, stirring occasionally, until the mixture thickens.
- Finishing remove the thyme sprigs and let the jam cool before transferring to airtight jars.
