Description

A delightful jam that balances sweet cherry tomatoes with warm spices, perfect for enhancing both savory and sweet dishes.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • ¼ teaspoon crushed red pepper flakes
  • 5 cups (4 pints) cherry tomatoes
  • ½ cup water
  • ¼ cup apple cider vinegar
  • ¼ cup dark brown sugar
  • 2 sprigs fresh thyme
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Heat the olive oil in a large soup pot or Dutch oven over medium heat.
  2. Sauté the diced onion for about 5 minutes until softened, then add the minced garlic and spices.
  3. Combine the halved cherry tomatoes with water, apple cider vinegar, dark brown sugar, thyme, salt, and black pepper. Bring to a vigorous boil.
  4. Simmer for 25–30 minutes, stirring occasionally, until the mixture thickens.
  5. Finishing remove the thyme sprigs and let the jam cool before transferring to airtight jars.
