- 1 box (15.25 ounces) strawberry cake mix
- 3 large eggs (room temperature)
- 1 cup water
- ½ cup vegetable oil
- 1 package (8 ounces) cream cheese (softened to room temperature)
- ½ cup unsalted butter (melted)
- 2 ½ cups confectioners’ sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 1 cup diced strawberries (plus extra for garnish)
- 2 cups white chocolate chips
- Vanilla ice cream (optional for serving)
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Combine the cake mix: In a large mixing bowl, combine strawberry cake mix, eggs, water, and vegetable oil. Mix until smooth—about 2 minutes.
- Pour and bake: Pour the batter into the prepared pan evenly. Bake for 30 to 35 minutes, or until a toothpick comes out clean.
- Prepare the cream cheese layer: Beat together the softened cream cheese and melted butter until creamy. Add confectioners’ sugar, vanilla extract, and salt. Mix until blended.
- Add strawberries and white chocolate: Once the cake is done, sprinkle diced strawberries and white chocolate chips over the top.
- Spoon the cream cheese mixture: Gently spoon dollops of the cream cheese mixture over the cake.
- Return the cake to the oven for another 15 to 20 minutes, or until the cream cheese layer is set.
- Cool before serving: Allow the cake to cool for at least 30 minutes before slicing and serving.
